Easy Meatballs

Serves 4
Meatball ingredients
- 1 packet of MAGGI Onion Soup Mix
- 200g Meadow Mushrooms, chopped up (eg portabello, white button)
- 400g mince
- 1 carrot
- 4 tbsp parsley (optional)
- ¾ tsp oregano (optional)
- ½ tsp thyme (optional)
- 1 egg, lightly beaten
- 1/3 cup breadcrumbs
- Butter or oil for frying
Sauce ingredients
- 1 tin of tomatoes (any flavour – I like basil or Italian tomatoes)
- 1 clove of garlic
- 1 onion, diced
- Butter or oil for frying
- Spaghetti to serve
Method
- Grate the carrot and chop up the herbs and mushrooms.
- Mix all meatball ingredients (except the butter/oil) together in a bowl. Roll the meatball mixture into as many meatballs as you like.
- Heat the butter/oil in a frying pan and fry the meatballs until brown on the outside.
- While the meatballs are cooking, make the sauce. In another frying pan, heat the butter/oil and cook the diced onion and garlic together until soft. Then add the tin of tomatoes. Add in the meatballs and simmer until the meatballs are cooked through.
- Serve over cooked spaghetti.
