My friend made this for me around 10 years ago now, and I made sure to grab the recipe from her. It’s still a family favourite, particularly in winter. If you like gooey warm chocolatey puddings (and who doesn’t?!) then this is the dessert for you! So comforting with lashings of chocolate sauce and a delicious banana taste.
Serves 6
Ingredients:
125g butter
95g caster sugar
2 bananas, mashed
2 eggs
Pinch of salt
2/3 cup self raising flour
2 tbsp cocoa powder
For the sauce:
2 tbsp cocoa powder
2/3 cup brown sugar (I used raw)
1 1/4 cup boiling water
Directions:
Preheat oven to 170° fan.
Using an electric mixer, cream butter and sugar until light and fluffy. Mix in mashed banana and eggs.
Fold in flour, salt and cocoa powder.
Pour the mixture into an ovenproof dish.
Make the sauce by combining the brown sugar, cocoa powder and boiling water in a jug. Stir to combine til smooth. Pour over the top of the pudding.
Bake for 40-45 mins.
TIPS
The absolute smallest size ovenproof bowl you can use is a 1.2 litre or 5 cup capacity (which I used in the video). Go slightly bigger if you can to avoid it spilling over.
Delicious served alone, or with custard or ice cream.
