Almond Cupcakes

Mmmmm…. these Almond Cupcakes are soft, moist and delicious! A refreshing change to vanilla, they’re super easy to make and definitely more-ish!

Makes 24 cupcakes.
 
Ingredients:
  • 170g butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 1/4 cups milk
  • 1 1/2 tsp almond essence 
  • 1/4 tsp vanilla essence 
  • 2 1/2 cups flour 
  • 2 1/2 tsp baking powder 
  • Pinch of salt 
Icing:
  • 1/2 cup icing  sugar
  • 1/8 tsp almond essence 
  • 2 1/2 tsp milk (approx)
Directions:
  1. Preheat oven to 170°.
  2. Cream butter and sugar until pale and creamy. Beat in eggs. Add milk, almond essence and vanilla essence. Mix well.
  3. Add flour, baking powder and salt. Fold gently. 
  4. Spoon into paper cases. 
  5. Bake for 15 mins, or until cakes spring back in the centre when lightly touched
For the icing:
  1. Mix together the is icing sugar, almond essence and milk until smooth. (Add just enough milk to make the right consistency). 
  2. Drizzle over cold cakes.
