Coffee Sour Cream Cake 

Sometimes a cup of coffee just won’t cut it – thank goodness for Coffee Sour Cream Cake! This is the perfect combination of cake and a strong coffee hit.


  • 125g butter or margarine
  • 1 cup sugar 
  • 3 eggs
  • 1 tbsp rich instant coffee granules 
  • 1 tsp vanilla essence 
  • 1 tbsp hot water 
  • 190g self raising flour 
  • 95g sour cream 
  • 2 tsp rich instant coffee granules 
  • 1 tbsp hot water 
  • 1 cup icing sugar 
  • 20g melted butter or margarine 
  1. Preheat oven to 170°
  2. In a  bowl, cream butter and sugar. Add 3 eggs one at a time, mixing well each time. 
  3. In a small bowl, add the coffee granules and vanilla essence. Add the hot water and stir to dissolve. 
  4. Pour into mixture. Mix well. 
  5. Fold in flour and sour cream.
  6. Spoon into a 20cm lined and greased tin, smoothing the top. 
  7. Bake at 170° for 40 mins .
  8. Cool on rack.
  9. To make the icing: Dissolve the coffee granules in hot water. Add icing sugar and melted butter. Mix until smooth. 
  10. Spread over cooled cake and enjoy!
